Do you know that song? Ella Fitzgerald is amazing! While I was making these cupcakes I sang this song to myself which can be deemed as sad...but it wasn't.

My cyber-baking friend from Twelve Five Cakery told me that Target was selling Valentine's Day mailboxes. How cute is that?! Then we thought about what to do with said mailbox and it was decided to make some love letters.
So here we go.

Then I made some hearts and sprinkled them.

I really liked these pictures so I took a lot of pictures.

Molten Chocolate Cake Disaster

Hello Everyone,

'Tis the season for chocolate. I have a love/hate relationship with chocolate. On any given day I would prefer to eat something sugary as opposed to something chocolatey but there is one chocolate dessert that I would marry.

What is that?

The Molten Lava Chocolate Cake from Chili's (thanks Stacy. I really do need someone to edit this thing for me :). That dessert is AMAZING!

So since love is in the air I thought it would be nice for us all to learn how to make this amazing dish. I found a recipe from The Pioneer Woman and got to work.

This is the point where I would normally show a "look at the oozing center" picture...but I over baked the little guys and there was no oozing center.

I did have a back up plan...but that failed...miserably!

I had a ramekin filled with chocolatey goodness that actually was baked right. Why dont I show you that?

Well I can...Here is it....

In the process of flipping the ramekin onto a plate that was clearly too small I not only burned myself with molten chocolate lava, but I also broke my ramekin.

Sad day for baking. Sad day for my hand. Sad day for my ramekin.

We All Want Love

Hello Everyone,

This is the second time I am writing this post. I wrote it a while ago and to be honest that post was freaking AWESOME but it disappeared. SO here we go again.

In this post I have three different cookie designs featuring stick people. I once (a while ago) saw a cute picture of a stick boy calling a stick girl on a can (you will see the picture later) and I loved the idea...and I stole the idea...and then I expanded on the idea.

So the first one I am going to talk about is this one:

So I call the above cookie "We All Want Love". I don't normally listen to Rhianna but she has this one song called "We All Want Love" and that song is my JAM!!!

Do you like the background? I totally drew it with my hands!

If you noticed these cookies are not done in my traditional way. This time around I used fondant as my base. WHAT are you crazy?! Fondant?

Well there is a good thing about fondant and a nasty thing about fondant:

Good thing: Fondant is easy to work with and it makes the cookie look really sleek and clean AND you don't have to wait for fondant to dry. Bad thing: It taste gross.

So wanna make some fondant cookies for yourself? Here we go!

So once your fondant is on your cookie you can decorate it however you wish. As you could see my first decorations were the "We All Want Love". My second decoration is titled "Hello?"

Pretty right. But what if this happens?

Take a swig of vodka and do this:

YAY!!! it erases! HOORAY FOR VODKA!!!!

So taking the stick people theme I made this up, which I named "Love Connection"

The following cookie was taken from a picture I saw on one of the websites I frequent (don't remember which one but I am sure you all have seen it before). I loved it and wanted to do the scenes in cookie form. I call it "Love Over Time"

I have one more idea for Valentines Day that I will post at a later time.

This was fun and I hope this post doesnt disappear on me!

Three Milk Cake

Hola Everyone,

I love cake. We all know that, why else would I have a cake blog.

I have always wanted to try to make a Tres Leches cake but knew it would be impossible because I did not have something that every baker should have.

What was I lacking? I mean I have charisma, I have grace, I have elegance, I have beauty (okay some of those things you dont need for baking, but hey I've got um!).

I didnt have a Kitchen Aid.

Until now.

This Christmas Santa (aka my mommy) got me the BEST present EVER (well besides the straws that my sister got me for my birthday).

Here he is!!!!

Isn't he pretty! My friend Kateri named him for me and I love him. Might even marry him.

So knew I wanted his first baking experience to be something special. I asked Kateri (my go to for advice) for some ideas on what to bake and she has the audacity to say "cookies?". WHAT how pedestrian!

No. No. I know what! A Tres Leches cake that I have saved in my bookmarks. I shall make that! I took the recipe from the Pioneer Woman (whom I love as a blogger...but HATE as a tv personality...just saying).

It was fun and yummy and easy. Lets begin.

Do you know how I know this was good? My niece Sparky requested that it be her Birthday cake.

Happy Birthday to ME!!!!!

Hello Everyone,

Well the day has finally come. I am over the hill, past my prime, closer to death.

I have finally turned the big 3-0.

I love birthdays, well to be more specific...I love my birthday (most likely because I love the attention) but also because I love cake.

I cannot believe that I am turning 30 today. Does that mean I have to get rid of my unicorn collection? Where will Machiavelli, Brutus, Sprinkles, Raul, Buttercup, Wynonna, Clyde and Antonio Banderas go?

I don't feel 30, I mean 30 year old people don't have unicorn collections do they? Well this one does and I am going to keep them!!!

I made myself some cupcake cookies. Wow that sounds really depressing. I did. Primarily to share my birthday with you all.

First step is to color some sugar pearls. If you have colored one that you bought in the store that is great but if you have white ones (like I did) but want to add some POP to your cupcakes and save a dime do this:

New Year Wish Jar

Happy New Year Everyone,

2012 (wait...I thought the world was ending, or is that next year?).

I have never done a New Years post before, but this year I decided to do something a little inspirational.

I have a feeling that 2012 is going to be an awesome year! I will be turning a humongous leaf soon (more about that in 10 days) and I hope this year will grant me amazing things.

I hope all of that for you guys as well.

So I was thinking "What can I make that will give people their wishes?"

Well a jar of cookies that is! Cookies with key 'wish' words written on them.

I have always been a sucker for items that will grant a wish. Wearing bracelets or necklaces that will give you good luck. Wearing bracelets or necklaces that have a charm on it and when that charm falls off your wish comes true (actually I am wearing one right now).

I think its a nice idea for the New Year to whip up some cookies (or buy some refrigerated dough) and make a New Year Wish Jar for your friends and family.

Nice idea right? I thought so.

So think of some key words (words that would best be utilized by your gift receivers) and write them down. Make sure you spell the words correctly! I was writing out "peace" and instead I wrote "peach". Yes, I need spell check in real life.

I wish that you all get what you want in life. Not to get all sentimental and Oprah about it but to get what one wants they first must take a step towards it.

You want a boy/girl friend? Talk to that girl/boy you've been checking out. Want a new job? Start looking in the classifieds or get more education so you CAN get a new job.

Wishing is great and all, but I know a 'magical' wish bracelet wont make my wishes come true. Only I can make my wishes come true.

But I must admit, having a fairy Godmother wouldn't hurt either!

Snowflake Carcasses

Hello Everyone,

I know you are all looking at this beautiful picture of a lovely royal icing snowflake and wondering "what's up with the title". You will see kids, you will see.

Have you noticed that sometimes when you think something is going to AWESOME, sometimes it just isn't awesome?

Sometimes there are just bits and pieces of awesomeness that remains and we must appreciate them.

And when I say bits and pieces of things...I am talking about snowflakes.

I attempted to make some royal icing snowflakes and I failed *hangs head in shame*.

Out of 31 snowflakes, I only had 10 survivors.

It works in theory and here is what I did.

So after they dried overnight I went to pick them up. Using the same technique I used here.

Yeah....

Some did survive and they looked awesome!

Gingerbread House with Sparky!!!

Hello Everyone,

Last year I made a gingerbread house that was a complete failure.

This year my house was AWESOME!!! 

See...

Now I have a confession.  I didn't bake any part of this gingerbreadness.

I...CHEATED!!! *hangs head in shame*.  

I am sorry.  I was at the store thinking about the candy I needed to buy to make the gingerbread houses happen when I saw a whole display of kits.  Yes.  I used a kit!

And you know what?  It was super fun!  It was nice to just open the box and get to work.  I called Sparky over and we had a gingerbread house party (I bought a kit with a village of houses).

So all you out there thinking that you need to make your own gingerbread, you dont.  The kids will like it even if it comes from a box.  Yes the icing wont taste like homemade (Sparky said "this doesnt taste like Aunty Cassie's frosting").  But it was super fun!  

So here is our work.

I have no holiday cupcakes or cookies done yet. I have been busy but doing things that I either already blogged about OR doing things totally un-related to Christmas.

Can You Freeze a Clementine?

Hello Everyone,

This has nothing to do with cupcakes but it is a fun story, well I think its a fun story.

I was at work. I brought a clementine to eat (obviously).

I put said clementine in the fridge cause I like them cold. At lunch I went to get it and realized it was rather smoochy.

Gross.

Fruit should NOT be smoochy. What should I do? Put it in the freezer? let it sit for a while and then come back and eat it? Sounds like a plan to me.

Well I forgot all about it.

The next week I go into the freezer to get some coffee and find my poor clementine. Frozen rock solid.

So what is a girl to do?

Take some pictures!

It looks yummy, but it was not yummy.

So lesson learned. You can indeed freeze a clementine but you will not be able to eat it.

The Quest for the Perfect Chocolate Chip Cookie

Ahhhh....the chocolate chip cookie.

The chocolate chip cookie is a staple in many bakers' arsenal of easy recipes one can whip up in a seconds notice.

It would seem that a seasoned baker like myself (kidding) would be able to make a simple chocolate chip cookie...it would seem.

Looks tasty doesnt it! Yeah...not so much.

I have attempted multiple chocolate chip cookie recipes in the past (and no, I do not have any photographical (not really sure if that is a word) evidence of these attempts...yes it was that bad!) and they have all fallen flat (quite literally).

So here we go. I am on the quest to make the perfect chocolate chip cookie. Well what is the perfect chocolate chip cookie? I personally like cookies that are chewy in the middle but nice and crispy on the outside. I have tried Martha Stewart's cookies and other popular blog sites cookies but they all fail me.

Until I found a recipe for a Puffy Peanut Butter Cookie with Chocolate Chips. What?! There is peanut butter in it? Well yes, but I just omitted that part and look what I got?!

Impressed? You should be.

Now go and eat some cookies!!!

HELLO EVERYONE!

Happy Thanksgiving!!!!

This year I decided that we needed to do something fun, for the children. What can we do I thought?

When Sparky was like five I traced her hand to make a hand turkey (like you do in elementary) and we decorated it and then I used that to tell my friends and family Happy Turkey Day.

Well...we can do that...but with a cookie!

The first step was getting me some hand prints. I took from Sparky (wow is her hand big!) Thing 1 and Thing 2. Thing 2 was easy. Trap her and trace...Thing 1 on the other hand was a little hesitant, until she saw me trace her sisters hand then she was all in.

So I was flipping through the Costco magazine (did you know they make magazines?) and found a recipe for a Skippy Holiday Peanut Butter Cutout. WHAT!!?!? I didn't know you could make a cut out cookie peanut butter flavored.

Step One: Make some cookies

Next (after they cooled off) get ready for decorating. If your kid is old enough they can do it themselves (Sparky decorated her own hand, SO adorable!).

Pumpkin Whoopie Pies

Hello Everyone,

So the holiday season is in full swing. Halloween has come and gone. Thanksgiving is almost here and before you know it the best holiday will be upon us. MY BIRTHDAY!!!! Not till January but it is pretty close.

I was thinking the other day..what holiday would I hate being. My first and final thought is Thanksgiving. All people care about is Black Friday (which I personally think is stupid...but hey if you want to do it have fun). No one cares about Thanksgiving. Yeah they get turkeys and have a nice dinner everyone is just getting ready for Christmas. Christmas is the Godfather of the holidays and Thanksgiving is...the Jan Brady of the holiday season.

On that note, my favorite thing about Thanksgiving is pumpkin! I love it. Last year I made a Pumpkin Roll (which will be making an appearance this year). This year I made these:

How To Eat A Cupcake

Hello Everyone,

Welcome.  Have you "liked" me on Facebook yet?  You haven't?  You should.  If I get 500 likers by Christmas I will be doing a giveaway.  I think this year I am going to giveaway my favorite things (a la Oprah...minus "YOU GET A CAR!!!").  

I know.  I know.  You are SO excited to read this post because the title captivated you.  You are sitting there thinking "have I been doing it wrong?"  Well guess what...I am sure you have been doing it wrong.  

Do not fret for I will be taking you through a step-by-step illustrated guide to how to eat that yummy cupcake you just baked.  There is a certain cupcake etiquette that I think you all have forgotten about.  The fork.  

Get ready because the teaching is about to being.  But first, go grab yourself a fork.

Whipped Cream Cheese Frosting

Hello Everyone,

So when I eat a cupcake I like to save the frosting for last (and I took pictures so that is a post to look forward to!). There is a place that I LOVE getting cupcakes from and their frosting for their red velvet is AMAZING!

I could never place my finger on what kind of frosting it was. I mean traditionally when you make red velvet you top it off with some cream cheese...but this stuff is so light and fluffy that it just could not be cream cheese.

THEN I realized something. Perhaps it was WHIPPED cream cheese frosting?!?!?!

To the Internet I ran and boy did I find a lot of options! I picked this one.

Panda Cookies

Hello Everyone!

I made some Panda Cookie.

Cute right!

When I was in high school there was a boy in my "electronic music" class (stupid class...we didn't do ANYTHING!) who used to call me Panda Bear. Not sure if it was because I am Asian or what, but I always found great offense to being called a panda. Yes pandas are adorable. Pictures of baby pandas sleeping will bring even the most depressed person off the ledge but when you are a 16 year old girl you do not want to be called a panda. What animal would have been okay. Hummm....Puma....Cassie like a puma! Or a Unicorn. What animal would you want to be?

And there you have it.

So I have access to PhotoShop (one word? Don't know). This was my first attempt to use it (thanks KATERI for helping me walk through some things!). Hopefully my pictures will get better (after I learn how to use the program).

It is October 30th and you all know what that means!!!

CANDY CORN DAY!!!!

It is a magical day. One in which we all get to eat the candy that you either love or hate.

As a kid I hated candy corn. As an adult...I dislike candy corn. The only time I will eat candy corn is today. National Candy Corn Day.

Last year I made these. This year I decided to do something different.

So let us celebrate with some soft sugar cookies, topped off with some candy corn (see win win! If you love candy corn, eat it. If you hate candy corn, pick it off!)

Baklava!!!

Hello Everyone,

Baklava is super duper yummy but it seems so hard to make.

Well guess what kids. It is super easy! Super duper easy!

First pictures and then the recipe. Try it. Love it. You are welcome.

I know something is good...when my family eats it...ALL. By the next day these beauties were history. THEN they asked me to make MORE. Here is the thing, my family doesnt really like sweets (CRAZY RIGHT!!! I should disown them) so when they want more, that means they really like them.

Here is the recipe (taken from Party Cakes - by Mich Turner)

Ingredients:
2 1/2 cups finely chopped toasted pistachios
1 cup confectioners' sugar
2/3 cup unsalted butter - melted
1 lb. phyllo pastry (totally buy the frozen kind)
1 1/2 cup granulated sugar
scant 1 cup water

Directions:
1. Make the syrup. Place the sugar and the water into a pot. Bring to boil then reduce the heat and simmer for 10 minutes, until thicken. Set aside.
2. Mix together the nuts and powdered sugar. Preheat the oven to 323. Line a 7x11x2 pan with parchment paper (I used 9x13). Brush with butter (yummy!).
3. Taking one sheet of phyllo pastry at a time, keep the remainder covered with a damp cloth. Brush with melted butter and lay in the baking pan. Repeat with 5 layers of dough. Spread half the nut mixture over and press down with the back of a spoon.
4. Add another 5 layer of pastry, brush with butter and spoon over the remaining nuts. Cover with 5 layers of pastry. Cut the baklava into strips and then diamonds. Pour the remaining butter all over it.
5. Bake for 20 minutes, then increase the temperature to 400 and bake for additional 15 minutes until rich golden in color and well risen.
6. Remove from the oven and drizzle the syrup over the baklava. Allow to cool in the pan, then remove, and then eat.

Thing Two's First Birthday!!!!

Hello Everyone,

My little niece (dubbed Thing Two) turned ONE!!!!

I made some cupcakes (and a cake).

So this time around we are going to do something a little different. We are going to NOT give you step by step instructions...instead I will just provide the pictures and you will have to figure out how to do it yourself. It is called tough love baby (and it is also called Photobucket isn't working for me so I couldnt properly edit my pictures).

So lets move on to the cake.

So one thing that I really should have done...was get rid of the corn starch residue on the fondant. Its super easy to do. If the fondant is hard already just brush it off. If the fondant isnt hard then dip a brush into some vodka (take a swig) and paint it right onto the cake (or gum paste).

I hope to be able to edit pictures better soon. I also have some Halloween cookies that I will be sharing with you all later.

I was watching tv one day and this dude made some cheesecake pops. I love the whole "food on a stick" thing but always had trouble with stick food (whether it be because the food was nasty or because it didn't want to stay on the stick) the point is that I hate sticks.

So what is a girl to do? Hello!! Take the sticks out of the equation! Simple.

Step One: Make some cheesecake. Here is the recipe that I used. Pre-Heat the oven (mine is named Dwight) to 350.

Pour it into a pan and bake for 45 minutes.

Once your cheesecake is done you must (and let me yell that at you), MUST refrigerate it overnight. No you cannot skip this step (well, you could but you will not be happy!).

Take out your chilled cheesecake and lets begin.

Once you are finished with that step stick them all into the freezer to firm back up. This first ball came to be because I love bacon. I. LOVE. BACON. If anyone wants to woo me they should get me a bouquet of bacon roses (yes, I saw that once so it is totally doable). Here we go.

My family was not sure if this would work, but they all loved it! I only made three and they are gone. true they are bite sized and we had to share them, so it wasn't hard for them to go fast BUT...I WANT MORE!!!!

Next up is a more traditional cheesecake. One with berries.

Last is just a plain cheesecake ball covered in melted chocolate and peanut butter.

Put them on a pretty plate and you are done! Easy right. What would you put on your cheesecake?

S'more Cookies Anyone???

Hello Everyone,

Imagine this. A lazy Saturday afternoon. Lounging around with my family (which at that moment consisted of my mommy, daddy, older sister (and her offspring Sparky), middle sister (and her two offspring's Thing One and Thing Two).

So I am trying to blog with Thing One(2 years old) and Two (almost 1 years old) climbing all over me. Man was that hard. So finally decided "forget this" and start to play with the babies when middle sister says:

"Why is it that when I am here you aren't baking?!?!?!"
"Well I was going to make some S'more Cookies"
"COOKIES!!!!!" Thing One says
"You want to help me?"
"Yes" she said as she took off to the kitchen.

Pull up your step stool...and here we go!!!

So after you take them out of the oven you need to stick mini marshmallows on and some more chocolate chips (no pictures cause I had Thing One and Two and Sparky running around the kitchen).

So much fun to bake with Thing One!!!!! One day I will bake with Thing Two (and she is adorable as well so I know you all can't wait!)

Hello Everyone,

So there is a person on Youtube called RRCherryPie and I am OBSESSED with his videos.

I will sit here for hours on end watching the videos over and over again.

Check this out:

Crazy hypnotic right. I love that scraping sound. His little spoon scrapping the side of the plastic as he stirs. LOVE IT!!

So I would sit here thinking "Man that looks like loads of fun, I want to play" but of course these are Japanese toys and not sold here...or so I thought.

One day me and my eldest niece (let us call her Sparky) were lounging around watching videos on YouTube and the following conversation ensued.

Me: "You have to see these videos"

Sparky: "Hey, I have that toy!"

Me: "Shut UP, you DO?!?!"

Sparky: "Yeah, but the directions are in Japanese so I didn't know what to do"

Me: "Bring it over, lets play!"

Sparky: "Okay"

So we were done with all the packets. We followed what RRCherryPie did and we were left with one packet and one pocket not touched. We said "Lets just throw it in there and toss in some water and see what happens"

That actually was the only candy that tasted good. The rest was kind of gross.

Well that is pretty much it. I would love to play with this again and try to make everything better looking. It was so much harder than I thought it would be.

Salsacrifice!!!!!!!

Hello Everyone,

So if you stalk me on Facebook (as you should...cause I like stalkers) you will know that my absence from posting blogs is due to my new toy Florence (as in Henderson, not the machine or Nightingale).  Who is Florence?  My new iPad!!!  I love her.  We have been slinging birds through the air, slicing up fruits and collecting eggs on my farm.  If you know of any games that I might love please let me know.  

Anyhoo remember a while back I competed in Threadcakes 2011?  Well they recently announced the winner and sad face...I wasn't one of them.  BUT that is okay with me because the winner of the 2D was AMAZING (click here) so good for her.  

This year they did something a little different.  They posted who was a finalist, and while my 3D wasn't considered my 2D WAS a finalist!!!  Out of 106 2D entries only 31 was chosen as finalist and MY CAKE WAS ONE OF THEM (yes that means that at least one person voted for my cake, but in my mind I was in 6th place!!!!).  Thank you everyone who "liked" it and for those who left super nice comments.

Last year my favorite cake (that I created) involved a ketchup bottle attacking some innocent tomatoes.  This year I decided to keep up with the vegetable murder theme and picked Salsacrifice! A hilarious (and cute) design.  

So lets see how I made it:

The major problem I had when thinking of this design was how was I going to make a blender.  I first wanted to do this cake in a 3D fashion, but I quickly realized that that was not an option.  SO I decided to make the blender out of rice krispie treats so that I can stick the giant onion in it and give it some pop.

All of my toppers were done. It was time to work on the actual cake.

Throw on the toppers and you are done!!!

For the most part I am happy with this cake.  Next year I am gonna try even harder! Make sure that I do clean work and DON'T get lazy!

Lemon Love

Hello Everyone,

Sorry I haven't been around for a while. I work (my "real" job) at a University and we started school this week. So this week and the week before this week have been CRAZY! So crazy that on the first day of school...I cut in front of a Freshman to get some bacon. Yep I am the crazy lady who would cut in front of a Freshman student to get her bacon fix, but I did see him the next day and he totally waved at me so I think I am forgiven. He should cyberstalk me...and YOU should cyberstalk me as well :)

I like lemons. I like berries. I like cakes.

Bake at 350 made a Lemonade Cake. To me that sounded like heaven. HEAVEN! It had what I love lemons, and I thought to myself....you know self, berries would go wonderfully with lemons. Kind of like my failed attempt at the strawberry lemonade cupcakes.

So for the recipe visit the link above. Let us get started:

Bake it up according to the recipe.

Meanwhile make yourself a fruit filling (or buy pie filling, or jam, or something that you think would go will with lemons). I had half a bag of frozen mixed berries. I poured it into a pot, added some sugar and then boiled it on the stove top.

Once that is done go on and make the lemonade glaze.

Take the cakes out and let them cool for about 10 minutes. Then do the following:

Time to make some frosting. Yummy, yummy frosting.

Then you eat it.

YUMMY. This cake is long gone and as I sit here writing about the cake I am craving, LONGING for this cake to just magically appear in my fridge. So I am going to leave you all now and see if it will be in the fridge when I open the door.

Best Chocolate Cupcake EVER!!!

Want to make some? Well here ya go. Enjoy, but I warn you...this will totally ruin ANY diet!

Guinness Chocolate Cupcakes

1 cup guinness

1 cup unsalted butter

3/4 cup unsweetened cocoa powder (preferably Dutch-process)

2 cup all-purpose flour

2 cup sugar

1 1/2 tsp baking soda

3/4 tsp salt

2 large eggs

2/3 cup light sour cream

Baileys Buttercream

2 - 4 cup confectioners sugar (depends on how thick it needs to be)

1/2 cup unsalted butter

3 tbsp baileys irish cream

Directions

Preheat oven to 350°F. Line 24 cupcake cups with liners.
In a saucepan over medium heat, melt butter and add Guinness. Bring to a simmer. Whisk in cocoa powder until mixture is smooth. Set aside to cool slightly.
In a large bowl stir together flour, sugar, baking soda, and 3/4 teaspoon salt.
In another bowl beat eggs and sour cream until thoroughly combined.
drizzle in Guinness-chocolate mixture and beat just to combine.
Add flour mixture and mix briefly on slow speed just until the mixture comes together.
Using rubber spatula, fold batter until completely combined.
Divide batter among cupcake liners, filling them 2/3 to 3/4 of the way.
Bake cake until toothpick inserted into center comes out clean, rotating them once front to back if your oven bakes unevenly, about 17 minutes. Cool cupcakes on a rack completely.
To make the buttercream, whip the butter in the bowl of a stand mixer fitted with the paddle attachment for several minutes until the butter is very light and fluffy. Slowly add the powdered sugar, a few tablespoons at a time.
When the frosting looks thick enough to spread, drizzle in the Baileys (or milk) and whip it until combined. If this has made the frosting too thin (it shouldn’t, but just in case) beat in another spoonful or two of powdered sugar.

I have LOADS of problems with this stupid cake. I was cursing the baking gods asking them WHY?!?!?

This is when I realized that my buttercream was starting to melt. I have never had this problem! Melting...WHAT ARE YOU DOING BUTTERCREAM!!!!

I scrapped off the buttercream and threw it out. Made another batch, that seemed fine...but was really soft as well.

This isnt what I envisioned....but it will have to do.

National Cheesecake Day!!!

Hello Everyone,

In most places National Cheesecake day has ended, and I am left with a hole in my heart and an additional pound to my butt.

It was a great day to celebrate our love of cheese and cake.

I hope you all celebrated by either making your very own cheesecake or going and eating store bought cheesecake (I did both. WINNER!!!).

You know, its not that hard. To make a cheesecake that is.

Here is a simple recipe from Hershey for a Heath Cheesecake.

Welcome Everyone,

Second order of business: Cheesecake! National Cheesecake Day (July 30, 2011) is coming up and this is to get us in the holiday spirit!

I used to be scared of the cheesecake. The cheesecake was something that I thought I could NEVER EVER DO.

Then one Christmas I received spring-form pans and my life changed for the better.

I learned and realized that I can make an awesome cheesecake. Yes sometimes they don't look pretty but they will always taste amazing (well...maybe not always).

Another thing I love besides cheesecakes, unicorns and cupcakes are bowls. I. LOVE. BOWLS! What should you buy me for Christmas? A bowl.

You might have noticed in the past that my bowl choices were limited to the big ugly orange one or the light blue broken one...then I discovered Bed Bath and Beyond (its pretty new here in the islands) and at said store I found these:

I took them home and they screamed at me "MAKE A CHEESECAKE". Well when rainbow bowls talk to you, you must listen.

I seem to have a thing for the combination of chocolate, graham crackers and marshmallows and knew that one day I must try to make a cheesecake version. The recipe I used was not mine but I failed to find its source so I can't share with you all...sorry.

And that is all.

I will be making another cheesecake in honor of the day and post it on Saturday (crazy? Maybe a little).

Somebody's Getting Married!!!!

I love this movie (The Muppet Take Manhattan) and when I think of weddings I sing this song in my head.

Over the weekend Caryn and Colin got married! I provided the favors, cookies for the centerpieces AND a cupcake tower (I was one very busy bee!)

The favors were bride and groom heart shaped cookies. Something I have seen before and have ALWAYS wanted to try. Here was my chance and I ROCKED IT!!!!

Want to make your own? Here is a guide to making your own cookies. You know what is different about these cookies? I used fondant for the base instead of royal icing.

WHAT!? FONDANT on a COOKIE?! Well other people do it and their cookies turn out so clean I had to give it a try. In the tutorial I accidentally called the fondant "gum paste" please ignore that and use fondant. NOT GUM PASTE...FONDANT (yeah I needed to yell that).

So I did these cookies in one day. There was 342 (171 of each type). It took me 13 HOURS to decorate them all. 13 HOURS!!! My hand was KILLING me when I finished but I am super happy with how they turned out.

Hello Everyone,

Remember a few post back I wrote of my love/hate relationship with the whole "I don't know" design. Well it has happened again (and I assume it will happen often). The other post I was talking about my oldest sister. This post is in reference to my other sister (who is in the middle of me and my oldest).

A while back I remember seeing super adorable cookies from Bake at 350 and I have always wanted to do a cookie version, but since I had the opportunity to design my own cupcakes I went with the "Cute as a Button" theme.

Aren't they BOWtiful? Lame joke...totally!

Hey, you know what the cool kids are doing? They like me on Facebook, you want to be a cool kid right. Well go on then...click the Like button.

You know what I love (and hate at the same time). When the following conversations occur:

Them: "I want cupcakes for my friends bridal shower"

Me: "okay, what do you want them to look like?"

Them: "I don't know. Make whatever you want"

I love that I get to be creative but I hate that I am never sure if the person receiving the cupcakes will like them. What if this woman HATED bows? What if when she was younger her mother would make her wear huge hideous bows and then one day the bow came to life and ate her hair forever scaring her? Far fetched? Possibly, but you just never know.

Thankfully the bride-to-be loved them!!!

So here is my little tutorial on how to make fantastic bows.

Golden Oreo Cheesecake...yummy!!!!!

Hello Everyone,

I have a confession. I don't care for chocolate. Sure I will eat it sometimes but its not like I go searching for chocolate. I love gummy candy. Once I used gummy bears to bribe a friend to be in a musical with me (Pippin, I played Fastrada, good times), it totally worked and we are still good friend. See the power of a gummy, could chocolate do that? I don't think so.

Given my aversion to chocolate when I found a recipe for a Golden Oreo Cheesecake I HAD to give it a try.

Close your eyes and picture a beautifully artistic picture of a cheesecake. Got it? Good, keep that image in your head cause I didn't take an artful picture of the finished product.

Hello Kitty Ruffle Cake

Hello Everyone,

I tried to think of a clever title for this post but I am drawing a blank. It is Amazing how many people love Hello Kitty. I just hope I never get tired of her.

I like to spend my free time surfing the internet for cute pictures of cakes. I also like to look at all the cookie/cupcake/cake blogs out there and compare myself to them. I sit here and think "Man, I need to shot better pictures" or "Man, I wish I were more clever".

I was out to dinner recently and got a lychee martini (which was VERY strong) and I started talking and you know what? I was so funny! Then, light bulb! To compete with other food blogs I must become more clever and to become more clever I need to drink before I blog!

THEN I watched Oprah Presents Master Class. It was an episode with Oprah talking about how she became OPRAH and she said "The way you step up your game is not to worry about the other guy in any situation, because you can't control the other guy. You only have control over yourself"

Wow Oprah. Are you talking directly to me!??!?! I mean she was looking right at me...that message was meant for me right? I am now spreading it to you all.

I have seen ruffle cakes on other blogs and I always wanted to try it out. My sister ordered a cake and said "It needs to be Hello Kitty, I will leave the design up to you" Music to my ears!!!

First I wanted to made a banner thing to say "HAPPY BIRTHDAY!" (I later learned that this is called bunting...strange names for these things!).

I opened up Microsoft Publisher and made a simple sign.

When Life Gives You Lemons...Make a Cupcake!

Hello Everyone,

As always I am going to implore that you go and "Like" me on Facebook.

I will wait...done? Okay lets move on.

A popular food chain has a new drink that I love, it is called the Frozen Strawberry Lemonade. As I drank my drink it got me to thinking "I should make this into a cupcake!"

Pretty right. Yep I thought so too...but they tasted gross!

I tried out a new recipe by a VERY popular bakery in the mainland and it just did not work for me. I think I added the wrong amount of baking power (so they didn't rise...baking powder makes things rise right?) and I think I UNDER mixed it (I tend to OVER mix things so I was trying hard to mix until "just blended" like the recipe says).

They look pretty, but this teaches you that you can't judge a cupcake by its decoration! The one bright note of these cupcakes were the frosting, that was yummy. You all should give it a try, I am sure you will have better results than me.

I am a little ashamed to show you all the "how to" pictures since in one shot you can OBVIOUSLY see that I UNDER mixed it...oh well...here we go. This blog is about learning (and I am still learning!)

Let those bake up a bit. Cool them down and make some buttercream!

Add powdered sugar till you get the consistency that you need. Pipe it on, cut up some fruit and you are done!

Okay now. They look good right. WRONG. Mine were disgusting...but I am sure that when you all try to make this yummy cupcake it will work out for you. Go out there and bake away. When you make the yummy cupcake come back and comment on this post telling me how awesome your cakes were and how much THIS cake sucks.

I haven't blogged in FOREVER! Present day is awesome. What is present day? Well here is the tale of Present Day:

Me: I like getting presents.
Friend: Me too!

Friend: Hummm....half way between your birthday and mine...so the 18th of every month!

So every month we have a Present Day! One day I was looking at the website Must Have Cute and stumbled upon a picture of candy in a box labeled "Happy Pills". What a cute concept!!! I HAD to make my own but I was thinking, in what situation would you give someone "Happy Pills"? Ummm...Present Day!!!

This is super easy and I really didnt need to take pictures of the process cause you can kind of tell from the above picture BUT to keep with the theme of my previous post I have to include a "how to" guide.

May Day Is Lei Day In Hawaii

Today is May 1st and in Hawaii that is May Day which equals Lei Day.

So I don't remember much about why we celebrate May Day...all I remember is that we would put on May Day celebrations and usually (if you happened to be in Kindergarten) the adults dress you up as ducks. Hello Everyone,

I am going to tell you all a story and I hope you don't judge me after you hear this story...

Ready?

I saw the Easter Bunny. He is REAL! It happened many moons ago when I was in the 3rd grade. (I actually already told this story here, but thats okay). I woke up in the middle of the night, threw up and was on my way to my moms room to tell her that I was sick. As I walked past the piano (where our Easter baskets were kept) I looked up and there he was. A giant bunny (whom I can only assume was the Easter Bunny). He looked at me. I looked at him. He waved. I waved back. Then I went on my way.

Granted I might have been hallucinating but to this day I can SEE the Easter Bunny (he is pink by the way).

Let us make some eggs.

That is a bunny I made last year....just threw it in for good measure.

Feed Me...Like a Mama Bird...

Hello Everyone!

So Easter is right around the corner. I had plans for many Easter cupcakes...but work gets in the way and I have not had the time to make my creations. I hope to do something Sunday...but it wont really be "Easter" like...more like Spring like.

The first cupcake I ever decorated was for my sisters baby shower. A month after that was my sisters birthday. I asked her what she wanted on her cake and she told me "a bird, feeding baby birds ladybugs". I did that (cant find pictures) and I decided to recreate that masterpiece on some cupcakes.

When I think of Easter I think of this really old movie called The Easter Bunny is Comin to Town (1977)

Let that set up and move on.

Chaminade University of Honolulu presents Oliver! You all should go watch it.

If you live on Oahu and have nothing to do this Saturday (April 16 at 7:30) and Sunday (April 17th at 4:00) you should watch it. Click HERE for more information.

The stage manager of the show asked if I could make some cupcakes and of course I was down for that. She requested some bowls and then I decided on doing Oliver! signs. This was a new technique for me and while some of them turned out awesome...I was unsatisfied with the bulk of them. So no more words.

I waited for Oliver! to dry for like a day before I moved on...

WARNING: GROSS PICTURE AHEAD!!!

Bake some cupcakes, frost those cupcakes and slap on a decoration. DONE!

Hello Everyone,

Welcome to my blog. Have you gone to Facebook and "Liked" me? Well you should because I will be doing a Giveaway...what will I give away? I dont know yet but it will be AWESOME!!!

I made some sea themed cookies to go with my turtle cupcakes. Personally I think my sea turtle cupcakes are much MUCH cuter than these cookies but....the client liked them so that is really all that matters.

I am going to start off with my favorite cookie of the bunch. I was trying to go for Pearl from Finding Nemo. I hope I succeeded.

Yep that one is my favorite.

Next up a fish...that ended up looking like a shark.

Shark bait (oh ha ha)

Last I made a star fish.

Hello Everyone,

First order of business: Have you all gone to Facebook and "Liked" me there? You HAVEN'T...well you should. So click that and "like" me!!!

Second order of business: I love the look or macaroons. They are just so darn cute right? RIGHT...but the recipe looks like super duper hard and like I just like can't do it *toss hair*

So here are my versions of Fakearoons or as most people said "cake sandwiches". For this recipe I used cake mix and frosting from a can. Something can look FANTASTIC and be super duper easy.

I was asked to make some pineapple and plumeria cookies (the flowers are not that plumeria-ish to me but I tried).

Hello Everyone,

Looks yummy right? This is my little tribute to St. Patrick's Day. This cupcake is one of the most extreme cupcakes I have ever made AND the most delicious!

It is a Guinness Chocolate Cupcake with Baileys Irish Buttercream.

I don't drink beer (I like the hard liquors) so this was new to me. Let us begin. Click here for the receipt.

One of the best cupcakes I have ever made. The cake doesn't taste like beer at all so I might use it again. LOVE LOVE LOVE the buttercream...I want to bathe in it.

Salted Chocolate Caramel Cookies

Hello Everyone,

Prepare to drool...

Yummy right! I will have the receipt below (and I will tell you where I got it from).

SO YUMMY but...a little salty. I would omit the salt from the batter and just have the salt on top. Another point is that they are best when warm...fresh out of the oven warm. I brought them to work the next day and yeah people ate it but the caramel was hard in the middle...it no longer looked like the picture.

Here is the receipt adapted from Two Peas and Their Pod:

1 1/4 cup all-purpose flour
1/4 teaspoon baking soad
1/4 teaspoon salt (you might want to omit that)
5 tablespoons butter
7 tablespoons unsweetened cocoa
2/3 cup sugar
1/3 cup packed brown sugar
1/3 cup plain yogurt (I used an egg...I didnt have yogurt at home)
1 teaspoon vanilla extract
Soft caramel, rolled into little balls
Sea salt

Preheat oven to 350 degrees, line baking sheets with parchment.

Mix dry ingredients. Set aside.

Melt butter in a saucepan over medium heat. Remove from heat and stir in cocoa and sugar mixture (it will look like wet sand). Add yogurt (or egg) and vanilla. Stir.

Combine wet and dry. Mix until moist.

Make little balls of dough. Flatten. Place caramel in middle and wrap the dough around.

Place ball (or flatten them) onto a cookie sheet.

Sprinkle with sea salt.

Bake for 10 - 12 minutes. Cool on pan for 2 minutes and then remove to wire racks.

EAT!!!!

The receipt says it makes 2 dozen...but I only got 18 cookies out of it.

Let's Twist Again!!!

Hello Everyone,

I have become multifaceted. I make cupcakes, cakes, cookies and now...BALLOON ANIMALS!!!!

It all started when someone told me he knew how to make balloon animals (we then dubbed him Balloon Boy). I was so intrigued by the statement "I can make balloon animals" that I HAD to learn how to do it. I have never in my life met someone who could make a balloon animal.

I pretty much bullied Balloon Boy into teaching me (and a couple of my friends) how to make balloon animals and I have since become a balloon twisting aficionado.

Here we go kids. Who needs to hire a clown for Timmy's birthday party? Not you because you can provide the entertainment (and hire me for the cupcakes)!

Now twist away! I totally understand that my directions stink so I suggest that you buy yourself a pump, a bag of balloons and YouTube balloon animals. It is amazing how many videos will pop up.

I made a trifle (or a parfait)!

There is an episode of Friends where Rachel makes a trifle...

...I can't put a video, cause I can't...

Ross:" It tastes like *feet*!

Ross:"Are you kidding?"

Joey:"What's not to like? Custard, good. Jam, good. Meat, Goooooooood.

That is what I was thinking while I assembled this.

SO have you ever baked a cake and then leveled the cake and thrown away the extra cake and thought to yourself "what a waste?"

Well I think that all the time. Now I thought (pretty sure its not an original thought) "Hey, I should make a trifle like thing"

It is easy.
